Acorn Muffins

1 Cup ground acorn meal
1 Cup plain white flour
3 teaspoons baking powder
1 teaspoon salt
2 teaspoons ground ginger
3 Tablespoons molasses or honey
1 beaten egg
1 1/4 Cups milk
3 Tablespoons oil (corn, olive or a combination of both)

Combine the dry ingredients in a large bowl.

Stir oil into dry ingredients until completely mixed.

Mix molasses (or honey), egg and milk in a medium bowl. Stir all ingredients together.

Bake in well greased muffin tins at 350F* (180 C*)  for 20 minutes or until a toothpick inserted in the middle comes out clean. Cool on wire rack.


Acorn pie crust
(for sweet and savoury flans)


This recipe is made with rehydrated acorn meal. This recipe makes four small 4 inch (10 cm) flans.

4oz (120g) acorn mush
2oz (60g) plain flour
3oz (80g - 90g) oilive oil
pinch of salt

Mix all ingredients and work into a dough. Set aside while preparing the filling, refrigerate for 20 minutes in warm weather.

Roll out the dough on a floured surface. Line the bottom and sides of flan tins.

Blind bake the pastry covered with aluminum foil or wax paper in preheated oven 350F* (180 C*) for
15 - 20 minutes.
Acorn Pancakes

1 Cup acorn flour
1 Cup plain white flour
2 1/2 teaspoons baking powder
3/4 teaspoon salt
1 beaten egg
1 1/4 Cups milk
3 Tablesppons corn or olive oil.

Mix all ingredients and let  the batter sit for 10 minutes.

Cook as for regular pancakes.

Great with honey, molasses or maple syrup.
Acorn Vegetarian Burgers

1/2 Cup acorn mush
1.2 Cup oak flakes
salt & peper
1 clove garlic minced (or pinch of garlic powder)
1/2 onion minced
1 teaspoon dried oregano
Butter or oil

Put all the ingredients into a bowl and mix into stiff mixture then allow to stand for 30 minutes. Form the mixture into burger patties and fry.
Acorn Molasses Cookies

3/4 Cup brown suger
3/4 Cup butter
1 large egg
3/4 Cup molasses
1 1/4 Cups acorn flour
1 1/2 Cups flour
1 teaspoon baking soda
1/2 teaspoon salt
1 1/2 teaspoon ginger
1 teaspoon cinnamon
1 teaspoon nutmeg
1/2 teaspoon allspice

Cream brown sugar and butter.
Add egg and molasses, mix thoroughly.

In separate bowl, mix together flour, acorn flour, baking soda, salt & spices. Add dry ingredients to wet and mix thoroughly.

Drop rounded spoonfuls onto greased cookie sheet. Flatten each cookie with your palm and sprinkle with sugar crystals.

Bake at 325F* (170 C*) degrees for 8-10 minutes.

Acorn Tortillas

2 1/4 unbleached all-purpose flour
1 Cup acorn flour
1 teaspoon salt
3 tablespoons olive oil
1 Cup of water


Sift the flours and salt together in a large bowl and make a well in the center.

Add the olive oil and water in the center of the well and swirl to combine with a finger or two. When the dough gets shaggy, start bringing it together with your hands, then knead it on a floured surface for 5-8 minutes. Use a bit more flour if it is too loose.

Lightly coat with more olive oil, wrap in plastic and set aside for at least an hour. This dough can hold in the fridge for a day.

Take the dough out of the fridge if you've put it in there and let it warm to room temperature. Get a griddle or a well-oiled cast iron pan hot over medium heat.
Cut the dough into 8 equal parts. Roll them out one at a time with a roller and then your hands - they need not be perfect, as this is a rustic bread but they should be thin, about 1/8 inch.

Lightly oil the griddle and cook the tortillas one or two at a time for 2-3 minutes, or until it begins to get nice and brown. Flip and cook for another 1-2 minutes.

Keep them warm in towels while you make the rest. Serve with some feta cheese & fresh herbs - green onions are excellent with this - and some high-quality olive oil.
Acorn Veg Burgers 2

1 Cup acorn mush
1 Cup boiled and drained (or canned) Haricot beans
1/2 Cup boiled and drained
(or canned) Kidney beans
1 egg
1 onion minced
fresh parsley finely chopped
1 teaspoon cumin
1 teaspoon paprika
salt & pepper

Put all the ingredients into a bowl and mix into stiff mixture then allow to stand for 30 minutes. Form the mixture into burger patties and fry or coat with oil and bake, turning once until brown on both sides.
